Or is it mania?
Regardless of cause, I have something else to blog about. It started with 88 cents a pound chicken. This was the deal at Albertson's a few weeks ago, so I scooped up five and tossed them in the freezer.
Since then, we've been feasting on chicken every other day -- chicken under a brick, my big fat Greek chicken, chicken provençal. We've managed to pick 4 of the chickens clean. I filled two gallon ziplocs with their carcasses, plus some of the internal goodies (minus a few for the pets), and some veggies scraps.
Boiled it all away with some herbs and garlic:
Strained, reduced, and more herbs added:
After another straining = 2 gallons of delicious stock in the fridge, waiting to be skimmed.
Then, soup tonight!
